UPDATE 02/07/2011:
WITH THE UPDATE ITUNES 10.1.2 THE TEREO SOUND IS NOW CLEAR & GOOD !
… so iTunes 10.1.2 is cleared for Pro-stuff again
———–
well i noticed a strange “mono-like” sound coming out of iTunes lately … so today i did “investigate” it closely and discovered that this is really an issue that is yet to fix by Apple – even with the “recently ” published update to version 10.1+ …
BTW: Everybody can check the iTunes “sound quality” themselves by playing a track in iTunes and playing the same track with Quicktime (using the right click on the Track >> “show in Finder” option in iTunes)

UPDATE 01/03/2011:
it seems some iPhone 4 / iTunes 10.1 / RME Audiointerface users got ride of the problem:
by user F5D (http://discussions.apple.com/profile.jspa?userID=621642)
1) Closed iTunes
2) In system Preferences, changed the sound output from RME HDSPe to Line out (built in)
3) Opened iTunes and started to play some music
4) While iTunes was playing, changed the Line Out back to RME HDSPe
The iTunes 10.1 is now working! The stereo image and clarity are back! What a strange problem. Btw, if you try to change the output while iTunes is playing and you are facing the problem, it stays. The key is to open iTunes while you have the line out selected. You have to close iTunes before changing between the outputs.

some forum posts i’ve found so far:

so there seems to be just one option / fix right now: downgrade you iTunes to version 10.0:

UPDATE: If you use an iPhone 4 you have to use iTunes 10.1 … so you have to life with that mono issue … sorry
i did it and it works fine… sound quality is back to normal … iTunes library is working fine!
so if you want to listen to your music in full stereo / quality whether it’s just for enjoyment or for your pro-stuff work … you have to do this! … otherwise your Mac has just become another “not-really-made-for-pro-stuff-issue”
If someone got another idea or fix please let me know!!
UPDATE: oh and please let Apple know that you have a issue with your iTunes … so maybe they fix this anytime soon:

Thanks for bringing this to everyone’s attention man!
sure thing!
